Rebellyous Foods Reaches Big Production Milestone for Plant-Based Chicken

Rebellyous Foods, a Seattle-based startup, accomplished a substantial operational milestone by running its Mock 3 production system over a few days and proving that it could produce plant-based chicken products continuously at a large scale. This milestone not only represents the company’s growth strategy’s major turning point but also takes place in a year when many alternative protein firms struggled with investor backing.
The new system, which is located in a plant in Stanwood, Washington, has a capacity of more than 5,000 pounds of plant-based chicken production every hour. The product line includes nuggets, tenders, and patties. The major difference between this arrangement and the previous ones is that this one gives the manufacturers the real-time option to adjust production up or down between shifts.
Founder and CEO Christie Lagally Bradburn remarked that the last quarter of the year 2025 was “momentous” as the company had managed to achieve automation of high-volume production with less workforce. Previously, the company had encountered restrictions with the Mock 2 system in New Mexico, and Rebellyous opted to construct and perfect its plant to realize full commercialization.
Rebellyous was established in 2017 as Seattle Food Tech, Inc. by Lagally Bradburn, a former Boeing engineer. Her goal was practical: make plant-based meat that is faster, cheaper, and easier to produce without sacrificing quality. The company’s strategy contrasts with some peers that focus heavily on marketing; Rebellyous emphasizes production efficiency and affordability.
Customers for its products include school districts in the United States’ National School Lunch Program, hospitals, restaurants, and other food service providers. The company saw 30 percent year-over-year growth in 2025 and raised $3.5 million in late 2025 to support expansion in 2026.
Revenue and cost goals are central to Rebellyous’ plan. Lagally Bradburn said the firm is nearing break-even status, with some months already cash flow positive. The successful commercialization of the Mock 3 system is crucial to reaching price parity with conventional chicken, a key part of the company’s long-term mission.
In 2025, a significant number of alternative protein firms saw a decline in investment, the investors being cautious with the companies that were mainly relying on branding rather than on production fundamentals. Rebellyous is of the opinion that its results-oriented method, which prioritizes investments in production and equipment over expensive marketing, will not only provide the company with better profit margins but also with more stable growth in the difficult financing market.
